The festival is one of Ireland’s oldest festivals and celebrates the native Galway oyster or ‘Galway flats’. Galway is home to one of the last remaining wild oyster beds in Dunbulcan Bay – a protected bay with pristine waters perfect to cultivating the rare native oyster.
